I remember skiing down the side of the Mess of Potage from CairnGorm's summit. There were some boarders who had to walk the flat bit to the coire lip and the flat bit on the way out. It looked a really pain as well as very slow.

Yep now I agree with that, it's a pain constantly unclipping. When skiing you only unclip when stopping for a pint and bite to eat.
I a nutshell:
Skiing is faster, easier to go uphill (both on your steam and surface lifts), faster.
Boarding is cooler (it feels cooler I'm sorry but it just does), looks better in the park and is easier to have more fun in deep powder.
And that's just the obvious ones.
